KootuCurry


Ingredients

  1. Plantain      -2(cut into pieces)
  2. Yam     -200 g (cut into pieces)
  3. Black Gram     -1/2 cup
  4. Coconut grind ed    -1/2 cup
  5. Turmeric powder     -1/2 teaspoon
  6. Chili powder     -3 teaspoon
  7. salt     -as needed
  8. Coconut scrapings     -2 tablespoons
  9. Dry red chili      -3
  10. Curry leaves   -a handful
  11. Coconut oil     -as needed

Cook bengal gram and keep it aside.Add turmeric powder, chili powder, salt, and coconut grinded into Plantaind and yam and cook it.When it is well cooked add the cooked bengal gram and mix it well. Then in another pan add coconut oil ,when the oil is hot add dried red chili and curry leaves. And add this into the curry. Kootu Curry is ready

Pineapple Pachadi


Ingredients

  1. Pineapple     -1
  2. Turmeric Powder     -1/2 Teaspoon
  3. Chili Powder    -1 Teaspoon
  4. Jaggery     -50 g
  5. Coconut Scrapped     -1/2 coconut
  6. Green chili     -4
  7. Mustard seeds     -3 Teaspoon
  8. Coconut oil     -1 Tablespoon
  9. Dried Red  Chili     -3
  10. Curry Leaves     -1 handfull



Cut pineapple into small pieces. Add turmeric,chili powder and jaggery and cook it well. Grind coconut scrappings creen chili.2 teaspoon of mustard seeds.Add this to the cooked pineapple and boil it. After boiling this add curry leaves and then turn the heat off.Then heat the oil and pop the remaining mustard and dried red chilly. Add this to the curry. Curry ready

Aviyal

Ingrediants



  1. Yam     - 1 Cup
  2. Carrot     -1
  3. Beans     -1 Cup
  4. Plantain     -1 Cup
  5. Drum stick     -1 Cup
  6. Coconut Scrappings-1 Cup
  7. Turmeric Powder     -1/2 Teaspoon
  8. Salt     - as needed
  9. Shallots     -3(small)
  10. Green chilies -5
  11. Curd     -1 Cup
  12. Coconut oil     -1/2 teaspoon
  13. water     -1/2 cup
This is a traditional dish in kerela.You can put almost all vegetables for this.Slice all of the vegetables in equal  length and size and then put all into a pressure cooker along with turmeric powder ans water. Keep it in high flame for onw whistle.Then grind coconut scrappings, shallots and green chillies together. Then add this paste to the cooked vegetables and add curd.Dont forget to add coconut oil..Thats allllll

Liver Fry



Ingrediants

  1. Liver     -1/2 kilo
  2. Chilly powder     -3 Teaspoon
  3. Turmeric powder     -1/2 Teaspoon
  4. Salt and Water     -as needed
  5. Coconut Oil     -2 tespoon
  6. Shallot     -10(chopped)
  7. Green Chilly     -4
  8. Ginger     -2'' piece crushed
  9. Garlic     -10 crushed
  10. Curry leaves     -a handfull
  11. Tomato     -2
  12. Pepper Powder     -1 Teaspoon
Wash and clean the liver.Then add ingredients from 2 to 4 and the liver into a pressure cooker and cook till the liver is well cooked.Heat a pan and add coconut oil and add the ingredients from 6 to 10 and saute.
After some time add chopped tomatoes and saute it till the tomatoes become mushy.Then add the cooked liver along with the gravy and cook. When the oil becomes clear add pepper powder and for garnish if you want with corriander leaves...It is tasty along with appam and chappathi....

Colour Fulll




Ingredients

  1.  Basmathi Rice      - 2 Cup
  2. Butter                   -4 Table Spoon
  3. Onion     -1 big chopped
  4. Capsicum -1 cup(all colors a cup each)
  5. Cheese     -1 tablespoon
  6. Cashew nut     - in small quantity
  7. Raisin     -in small quantity
  8. Chicken     -100 g(fried with pepper and shredded)
  9. Egg     -1(scrambled)
  10. Water     -4cup
  11. Salt      -as needed
I named the recipe because its very colorfulll.Wash the rice.Heat the pan and add 1 tablespoon  butter.when the butter is hot add cashew and raisin. Keep it aside and then add 1 tablespoon of the butter.Put the rice and roast it little then add the water.In another pan add rest of the butter and add all the capsicum then chicken and egg.Saute it well till the veggies are cook enough and dont forget to check the rice.If the rice is cooked then add the sauted veggies, shredded chicken and scrambled egg. Mix them well. Add the cheese.your rice is ready..

Pudhina Rice


Ingredients
1.Basmathi Rice          -1 Cup
2.Corriander Leaves   -1/2 Cup(chopped)
3.Pudhina Leaves        -1/2 Cup(chopped)
4.Green Chillies           -4
5.Ginger                      -.5'' inch piece
6.Ghee                       -2 Teaspoon
7.Salt                          -as needed

Put 1 teaspoon of ghee in a hot pan and saute the chopped coriander and pudhina leaves with split green chili along with ginger. Then put this in a grinder and grind it well. Meanwhile in another pan add remaining ghee and add basmathi rice and saute it.Then add 2 cups of water which i forgot to add in ingredients list along with salt.When the rice is done mix the rice with corriander pudhina grinded mix.Pudhina rice is done.Actually this recipe is not mine, i went to a restaurent ordered this. When i eat this i liked so i asked them the recipe and they gave me. So i thought of sharing

Coconut Chutney


Ingredients
Coconut                              -1 Cup
Green Chili                          -3
Shallots                               -2
Dried Red Chili                   -1
Mustard seeds                    -as needed
Curry leaves                       -handfull
Oil                                      -1 Tablespoon
Water                                 -1/2 cup
Add coconut, green chili, shallots and water in a grinder and grind them well.Meanwhile heat a pan add some oil and pop in some mustard seed and dried red chili and also add this grinded coconut and curry leaves. Its best with dosa and also with idili.I heatd from my mother some parts of kerela they add some tamarind (without seed) and also curry leaves while grinding the coconut mixture. To be true I didn’t try that…
